Grilled artichokes is the side dish your BBQ is missing
Grilled artichokes with hollandaise are one of my all-time favourite summer foods,” says Tim Hayward, author of Big Green Egg Feasts. “Grown up and sophisticated with an elegant hollandaise sauce, they are also romantic when shared and, for some reason, incredibly popular with small kids.” You can make the hollandaise on the Egg, if you have one – if you don’t, Hayward recommends making ahead and storing in a flask. Grilled artichokes with hollandaise Serves: 4-8 Ingredients: 4 large globe artichokes 1 lemon, cut into 4 wedges 4 garlic cloves, left whole, but given a whack to slightly crush 1 large egg yolk Juice of 1 lemon 200g/generous ¾ cup unsalted butter, melted Olive oil, for brushing Salt and freshly ground black pepper Method: 1. Wrap the artichokes individually in a double layer of foil, each with two tablespoons of water, a lemon wedge, a garlic clove and a big pinch of salt. Using the indirect set-up, burp and open your preheated Egg, place the wrapped artichokes on the stainless steel grid and leave them to steam for about 45-60 minutes with the dome closed until tender. 2. Meanwhile, for the hollandaise, put the egg yolk and four teaspoons of lemon juice into a heatproof bowl with one teaspoon of water and whisk together for two to three minutes until thick. Very gradually, whisk in the melted butter (leaving the white milky solids behind) in a thin stream until thick and creamy. Season with salt, pepper and more lemon juice to taste. Keep the hollandaise sauce warm over a pan of boiling water off the heat, stirring occasionally. 3. Burp the Egg and remove the convEggtor. Unwrap and halve the artichokes, top to bottom/vertically, then paint the cut side with olive oil. Using the direct set-up, grid cut-side down on the bars in the Egg until golden brown. Sprinkle with salt to taste just before serving. Recipe from ‘Big Green Egg Feasts: Innovative Recipes To Cook For Friends And Family’ by Tim Hayward (Quadrille, £30). Sarah Beeny tearfully insists ‘I’m just not gonna die, you do know that’ in cancer documentary
Sarah Beeny has opened up about her gruelling treatment for breast cancer in a new documentary coming to Channel 4. The deeply personal one-off film, Sarah Beeny vs Cancer, sees the 51-year-old broadcaster and property expert explore the past, present and future of breast cancer treatment in the UK, while dealing with her own journey to recovery. She welcomed cameras into her home for the programme just two weeks after three lumps were discovered in her left breast. Speaking through tears at the start of the documentary, Beeny says: “I’m just not gonna die, you do know that. I’ve got a whole life. I need it. I’ve got four children. People need their mother. The truth is, I kind of needed my mother.” Beeny’s mother died of breast cancer at 39, when Beeny was just 10. Beeny says in the film that she had been waiting her whole life to hear that she had cancer. Her partner Graham Swift, an artist, says in the documentary that it was a huge deal for Beeny when she turned 40 as a healthy woman. In the show, Beeny is seen at various stages of chemotherapy. Her sons are shown cutting her hair short, and later Beeny sits in her car after doing the school run, pulling out clumps of her remaining hair. Cameras also follow Beeny as she gets a wig fitted by the NHS. Swift, who calls Beeny a “force of nature”, says he has been up at night worrying throughout the treatment. “F***yeah, there are sleepless nights,” he says. “It’s really hard. It’s horrible.” Beeny has now got the all-clear, and at the end of the documentary, she signs off with the words: “The chances of surviving breast cancer have doubled in the past 40 years, and that only gets better and better the more that is understood. “So many people are so scared. It’s that fear that keeps a lot of people away from going and checking things out and getting treatment. “So trust your body and go and get it checked out at a proper breast clinic. “If you get the diagnosis that I got eight months ago, my message would be, just, don’t be afraid. Because amazing people are doing amazing things and the outlook is getting better every day.” Sarah Beeny vs Cancer airs at 9pm on Channel 4 on Monday 12 June. Matthew Perry made a secret special request for the last ever episode of Friends
Matthew Perry's special request he made for the final episode of Friends has resurfaced following the sad news of his death. In his memoir, Friends, Lovers, and the Big Terrible Thing, released last year, the late actor revealed how he wanted to close out the show by saying the final line. "No one else will care about this except me,” Perry wrote. “So may I please have the last line?” he asked the producer. The finale of the hugely popular sitcom came in 2004 after 10 seasons, and the final scene saw Chandler and Monica (played by Perry and Courteney Cox) bid an emotional farewell to their empty purple apartment as they were joined by Rachel (Jennifer Aniston), Phoebe (Lisa Kudrow), Joey (Matt LeBlanc), Ross (David Schwimmer). Before Chandler and Monica leave the city for the suburbs to start family life with their newborn twins, Rachel suggests the group grab a final cup of coffee. That's when Chandler's sarcastic humour shines through one last time to end the show on a light-hearted note. “Sure,” Chandler replied. “Where?” Of course, fans of the show know exactly where - the group's local coffee shop Central Perk which had been one of the iconic backdrops of the series. “I got to bring the curtain down on Friends,” Perry wrote. “I love the look on Schwimmer’s face as I deliver that line — it’s the perfect mixture of affection and amusement, exactly what the show Friends had always given to the world.” Upon news of Perry being declared dead on October 28, aged 54, many Friends fans shared how Perry made this last line request. One person wrote: "It is incredibly bittersweet that Chandler had the last line in the final episode of Friends. Gonna miss Matthew Perry a lot." "Matthew Perry delivered the final line in Friends. And made one word into a final laugh. A talented man. RIP," another person said. Someone else added: "One of my favorite jokes in the show and the ultimate send-off." "This was the perfect last words on Friends,” a fourth person commented. “Inside joke was that the Central Perk set had already been taken down. The cast of Friends released a statement, following the tragic news of Perry's death. "We are all so utterly devastated by the loss of Matthew. We were more than just castmates. We are a family,” it read. "There is so much to say, but right now we're going to take a moment to grieve and process this unfathomable loss. In time we will say more, as and when we are able. "For now, our thoughts and our love are with Matty's family, his friends, and everyone who loved him around the world".
