England boss Sarina Wiegman remains “concerned” about injured Keira Walsh after the midfielder was stretchered off in the Lionesses’ 1-0 World Cup Group D victory over Denmark in Sydney. Walsh, a 2023 Champions League winner with Barcelona, started every game of England’s triumphant Euro 2022 campaign and could clearly be seen telling the team’s medical staff “I’ve done my knee” after sliding to collect the ball late in the first half. The worrying scene dampened the elated atmosphere that followed Lauren James’ sixth-minute opener, a maiden World Cup goal for the 21-year-old Chelsea forward. Wiegman said: “Of course I’m concerned because she couldn’t walk off the pitch, but we don’t know yet, so we can’t take any assumptions. Let’s just wait until we really have a diagnosis and then we can tell you. “You saw what we did, (Georgia) Stanway dropped back and Laura (Coombs) came in. Yes, of course we had to find our feet a little bit. “You saw different stages. We really dominated the first half. Then Keira went out and we had to adapt to the situation. “In the second half, Denmark also had such a direct style of play. We also showed we can fight. The team showed real resilience. We kept it to 1-0 so it was really good and I’m really proud of the team.” Walsh later appeared on crutches, with ex-England striker-turned-pundit Ellen White telling the BBC: “(At the 2022 Euros) Everything came through Keira. There wasn’t a plan B. “I dreaded to think of the idea of us ever losing her because she was one of our best players. Beth Mead was scoring all the goals but all of our play came through Keira. She was the key cog, everything moved through her. “I just don’t know who England are going to have now in that six (defensive midfield position), or even potential double six, role.” Asked about White’s comments, Wiegman simply restated: “You saw the plan B. Georgia Stanway drops back and Laura Coombs comes in.” An update on Walsh is not expected until Saturday at the earliest. Wiegman fielded the same starting XI for every match of the Euros, but made two changes for the world number-four Lionesses’ second World Cup encounter against 13th-ranked Denmark. James replaced Lauren Hemp on the left wing while Rachel Daly returned to the familiar left-back role she occupied for every match of the European Championship, and Alex Greenwood shifted to centre-back. Wiegman’s decisions were almost instantly justified when Daly slipped the ball to James, who curled past Denmark goalkeeper Lene Christensen for what ultimately proved enough to settle the result after Amalie Vangsgaard’s header for a last-gasp equaliser clipped the post. Wiegman likes to stress football is a full-squad endeavour, but did say of James, younger sister of fellow England international Reece James: “She has done really well but it is a team effort too and we were very careful with her. “She is a very young, talented player. And yes, we were happy with the performance and she was ready today, so that was really good. “Of course the approach of this game, we know that Denmark was dropping a little deeper, that they have a very tight, defensive block and we really thought we needed to play it in the pockets. “That’s where she came a lot together also with Stanway and (Ella) Toone, and that worked really well. They really struggled with that, and yes, she made indeed a very nice goal.” Denmark boss Lars Sondergaard extended his condolences to Walsh, and felt that while her absence perhaps led to a second-half surge from his side as England adjusted, the threat from players like James highlights how difficult it is to come up against the Lionesses. He said: “After Keira Walsh, that’s always if you have to close one down, there’s another player. BBQ salad recipes without a soggy lettuce leaf in sight
BBQs are just as much about the side dishes as they are the burgers and various grilled meats, but that doesn’t mean you’re limited to serving soggy lettuce. These Maldon Salt salad recipes deliver on everything from a fresh and vibrant orange and carrot salad with halloumi, to a light but flavour-packed pasta salad. Or get your greens in with a steak salad with broccoli, parmesan, and a chilli and herb dressing. Orange and carrot salad with grilled halloumi This orange and carrot salad, paired with barbecue grilled halloumi creates the perfect salad for any summer dinner party. Ingredients: 2 Navel oranges 2 blood oranges 2 carrots 200g halloumi cheese 2 tbsp black olives 2 sprigs of fresh mint 4 tbsp extra virgin olive oil Maldon Salt 1 pinch of cumin Freshly ground black pepper Method: 1. Wash, dry and de-leaf the fresh mint. Set aside a few whole leaves and chop up the rest finely. Juice ½ a blood orange, filter out the excess bits/pips with a sieve, then season the juice with Maldon Salt and pepper. Add the olive oil, cumin and chopped mint and mix together well. Put this salad dressing in the fridge for later. 2. Cut the peel and pith away from the rest of the oranges with a very sharp knife until the pulp is completely clean. Cut each orange into segments and toss into a salad bowl. Using a vegetable peeler, finely shred the peeled carrots into the bowl, and add the olives and salad dressing together. 3. Chop the halloumi into thin slices, lightly brush with olive oil and then grill on the barbecue until golden on both sides. Serve together with the salad. Add a pinch of Maldon Salt for seasoning. Pasta salad The simple yet delicious pasta salad is easy to make, perfect for the hot summer months when craving for something light but packed full of flavour. Ingredients: 350g short pasta 150g cherry tomatoes 1 bag of mini mozzarella balls 16 black olives 8 anchovy fillets in oil 2 tbsp chopped toasted pistachios or pine nuts 16 capers ¼ medium red onion 4 tbsp extra virgin olive oil 4 sprigs of fresh basil with small leaves Maldon Salt Black pepper Method: 1. Wash, dry and chop the tomatoes into eighths, place them in a salad bowl and season with Maldon Salt and pepper. 2. Add the drained mozzarella balls, olives, capers and chopped onion and drizzle with olive oil. Drain the anchovies and add to the mix. Wash and dry the basil and then remove the leaves from the stem. 3. Cook the pasta al dente in plenty of salted water, according to the instructions on the packet, then drain and cool under cold running water. Once fully drained, mix the pasta in with the rest of the ingredients in the salad bowl. 4. To plate up, place the anchovies on top, sprinkle on the pistachios and basil leaves and serve at room temperature. Steak salad with purple broccoli, parmesan, and chilli and herb dressing A beautiful seared steak salad recipe paired with the best in season purple sprouting broccoli and broad beans. Ingredients: 400g sirloin steak 100ml plive oil, plus extra for frying A handful of chopped parsley A handful of chopped coriander 1 red chilli, deseeded and finely chopped 200g purple sprouting broccoli 150g broad beans, blanched 50g wild rocket 25g aged parmesan 20g toasted pine nuts A pinch of Maldon Salt Method: 1. Preheat the oven to 180C. 2. Begin by cooking the steak. Make sure your meat is out of the fridge 30 minutes before you want to cook it, so it has time to come up to room temperature. Get a frying pan or griddle pan on the heat get it to a nice high heat. Drizzle some olive oil onto your steak and season generously with Maldon salt and cracked black pepper. Once the pan is nice a hot, place the meat in and allow it to sear and sizzle on one side first. Depending on the size of your steak this can take a good 5 minutes on each side. You want good, deep caramelization on all sides of the meat. 3. While the meat is cooking place the purple sprouting broccoli onto a baking tray and drizzle over some oil and a pinch of Maldon salt. Place the tray into the oven and roast the broccoli for 10-12 minutes until tender and starting to char slightly. 4. Once the steak is cooked to your liking – we’ve served it medium rare here – remove from the pan and leave it to rest on a chopping board. The resting time is key! It helps keep all the cooking juices to stay absorbed inside before slicing. 5. While your meat rests, prepare the rest of the salad. Place the olive oil in a small bowl and mix with the chopped parsley and coriander, the diced red chilli and some Maldon salt and cracked black pepper. Set this dressing aside. 6. On a large platter scatter over the wild rocket. Next top this with the roasted broccoli and the blanched broad beans. 7. The meat will be rested now, so carefully slice at a diagonal into thin slices. Place this over the salad. Any meat juices that are left on the board can be carefully poured into the bowl with the dressing ingredients. 8. Drizzle over the dressing, shave some parmesan across the top and sprinkle over toasted pine nuts. Give the whole salad a final pinch of Maldon salt and some cracked black pepper and then serve. Budget Bites: Three one-pan recipes that minimise on washing up
If you are after simple, filling meals that require very little washing up… you are in the right place. As part of our Budget Bites column – where we’ve teamed up with Sorted Food to bring you easy, affordable, quick and (most importantly) tasty recipes once a month – we’ve brought you three one-pan dishes that maximise on taste, and minimise on mess. They also make the most of your staple ingredients while keeping your fresh shopping list minimal. We’ve also provided a handy shopping list for the ingredients (though hopefully most of it will be knocking about already), which are used across all recipes to ensure minimal food waste. You just need to decide where to shop, whether it’s locally or online. Shopping list 3 clove garlic 1 small butternut squash 2 lemons 200g fresh spinach 10g fresh basil 1 aubergine 200g cherry tomatoes 20g fresh basil 1 small broccoli 250g mascarpone 50g hard Italian cheese 280g extra firm tofu 50g black olives 2 tbsp capers 500g pre-cooked gnocchi 150g couscous 200g orzo Olive oil 1 vegetable stock cube cube Roast broccoli and orzo traybake This recipe also works well with diced courgette instead of broccoli. Serves: 2 Ingredients: 4 tbsp olive oil 1 broccoli (small) 200g orzo 2 cloves garlic 1 vegetable stock cube cube 100g mascarpone 1 lemon Method: 1. Preheat the oven to 220C, then fill the kettle with water and get it on to boil - this will be for the tray bake. 2. Cut small florets from the stalk of 1 small head of broccoli. Finely mince the stalk. 3. Toss the prepped broccoli with 2 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread it out into 1 even layer. 4. Roast for 10-12 minutes, until golden in places. Crack on with a bit of washing up while you wait. 5. Once the broccoli is ready, add 200g of orzo to the tray, then finely grate in 2 peeled cloves of garlic. 6. Crumble over 1 stock cube, tip in 500ml of boiling water, give everything a quick stir, and cover with tin foil tightly. 7. Bake for 12-15 minutes, until the orzo is nearly soft and most of the liquid has been absorbed. 8. Once the orzo is nearly soft and nearly all the water has been absorbed, remove the foil and bake again for 5-6 minutes, until the orzo is soft and all the liquid has been absorbed. 9. Give the orzo a quick stir once ready, and season to taste with salt and pepper. 10. Add blobs from 100g of mascarpone, then finely grate over the zest from 1 lemon and squeeze over its juice. Drizzle over the remaining 2 tbsp of oil and serve. One-tray tofu caponata-style couscous If you aren’t a tofu fan, feel free to sub it out for another aubergine. Serves: 2 Ingredients: 280g extra firm tofu 1 aubergine 5 tbsp olive oil 200g cherry tomatoes 20g fresh basil 1 clove garlic 150g couscous 50g black olives 2 tbsp capers Method: 1. Preheat the oven to 220C - this will be for the tray bake later. 2. Cut 1 280g block of tofu into around 9-12 bite-sized chunks, then remove the green stalk from 1aubergine and cut the flesh into similar-sized chunks. 3. Toss the tofu and aubergine with 3 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread everything out into 1 even layer. 4. Roast for 10-12 minutes, until golden in places. Get on with the rest of the dish in the next steps while you wait. 5. Add 200g of cherry tomatoes to a large measuring jug, along with 20g of basil, 1 peeled clove of garlic, 2 tbsp of oil, and a generous pinch of salt. 6. Blitz with a hand blender, until smooth - we will use this to cook the couscous in the next steps. 7. Once the tofu and aubergine are ready. Add 150g of couscous to the tray along with the cherry tomato broth. Give everything a quick stir and spread into 1 even layer. 8. Cover the tray tightly with tin foil. 9. Return to the oven and bake for 8-10 minutes, until the grains of couscous are soft and have absorbed all the liquid. Get on with the rest of the dish in the next steps while you wait. 10. Slice 50g of pitted olives crossways. Crack on with a bit of washing up while you wait for the couscous. 11. Once the couscous is ready, uncover the tray, and fluff the grains with a fork. Top with the olives, 2 tbsp of capers, and serve. Creamy roast squash gnocchi traybake If you can’t get your hands on mascarpone, try making this recipe with cream cheese instead. Serves: 2 Ingredients: 1 butternut squash (small) 3 tbsp olive oil 150g mascarpone 1 lemon 500g pre-cooked gnocchi 200g fresh spinach 50g hard Italian cheese 10g fresh basil Method: 1. Preheat the oven to 220C - this will be for the squash in the next steps. 2. Peel 1 small squash, cut it in half lengthways, scoop the seeds from the centre, then cut the flesh into bite-sized chunks. 3. Toss the chunks with 3 tbsp of oil and a generous pinch of salt in a large roasting tray. Spread everything out into 1 even layer in the tray. 4. Roast for 20-25 minutes, until completely soft and golden in places. Crack on with a bit of washing up while you wait. 5. Once the squash is ready, add 150g of mascarpone to the tray. Finely grate over the zest from 1 lemon, squeeze in its juice, then mash everything together with a potato masher until semi-smooth. Season to taste with salt and pepper. 6. Add 500g of gnocchi to the tray along with 200g of spinach. Give everything a good mix, then spread out into 1 even layer. 7. Finely grate over 50g of cheese. 8. Bake for 10-12 minutes, until golden, bubbling, and piping hot. Get on with the rest of the washing up while you wait. 9. Mix, top with leaves from 10g of basil, and serve straight from the tray!
