Do it for the Gram: Speedy but spectacular goat’s cheese linguine
This vibrantly green pasta recipe is one of my favourites in the book,” says Mimi Harrison, author of Beat The Budget. “Not only is it bright and Instagrammable, it’s also so delicious. The frozen spinach is reasonably priced and you don’t have to worry about it going off in the fridge. And the goat’s cheese provides creaminess, acidity and tang, all in one ingredient (hello, cost-effective!). “This is ideal for a speedy meal when you’re in a rush, or to serve to friends at a dinner party when you don’t want to spend half the night in the kitchen.” Goat’s cheese, spinach and basil linguine Serves: 5 Ingredients: 1 tbsp olive oil 1 onion, diced 500g linguine 3 garlic cloves, finely grated 160g frozen spinach 125g goat’s cheese 30g fresh basil Salt and pepper to taste Chilli flakes (optional) Method: 1. Set a non-stick pan over a medium heat and add the olive oil. Add the onion, season with salt and pepper and gently fry for four minutes. 2. Meanwhile, set a large pan of salted water over a medium heat and bring to a boil. Add the linguine and cook for two minutes less than the packet cooking time. 3. While the pasta is cooking and once the onions have softened, add the garlic to fry for a minute before adding the frozen spinach to the pan, along with 400 millilitres of the starchy pasta water. Increase the heat and cook the spinach and onion mix until the pasta is ready. 4. Add the spinach and onion mix to a blender with half of the goat’s cheese and the basil and blitz until smooth. 5. Drain the linguine and transfer back to the pan. Pour over the blended sauce and continue to cook over a low\medium heat. 6. After about two minutes, the sauce should thicken and coat the linguine. Serve with a sprinkle of any remaining goat’s cheese and a pinch of salt and pepper. Red Bull mastermind Adrian Newey hints at retirement: ‘It’s on a countdown’
Red Bull chief technology officer Adrian Newey has hinted at retirement in the near-future after the team clinched their 100th grand prix victory in F1. Max Verstappen won his third race in a row – his 41st in total, tying him with Ayrton Senna – in Canada on Sunday, seeing off the threat from Fernando Alonso and Lewis Hamilton. Red Bull have now won all nine races this season as well as bringing up their all-time century. Newey, who has been at Red Bull since 2006, was also celebrating his 200th personal win in over 30 years in the sport. The 64-year-old has largely been praised with Red Bull’s latest runaway design but admitted after the race in Montreal that his career is now “on a countdown.” “I’m lucky enough to be doing what I’ve always wanted to do, loved it,” he told Sky F1. “My career can’t go on forever. As long as the team wants me and I keep enjoying it I’ll keep going, but realistically it’s on a countdown.” Newey first made his name in McLaren’s title-winning cars of the 1990s before being lured to join the Red Bull project by Christian Horner. It was reported recently, too, that he has signed an extension to his current contract with the Milton Keynes-based outfit. “It’s been an amazing journey,” he added. “My dream as a kid was to be an engineer in motor racing. “First job and first salary was the big moment, everything else is a bonus. “All the wins are special. First win in Mexico [1991] stands out. The ones where the championship has gone down to the wire - very often Abu Dhabi, with Sebastian [Vettel] against Fernando [Alonso], and then Max against Lewis [Hamilton].” Verstappen now has a 69-point lead in the world championship to team-mate Sergio Perez, while Red Bull have an astonishing 154-point lead in the Constructors’ Championship to Mercedes. American expat shot dead on her ‘Shangri-La’ off-the-grid farm in Ecuador
A Colorado mother-of-three was shot dead while trying to protect her elderly father during a home invasion at her farm in southern Ecuador. Francesca Williams, 44, was killed when robbers burst onto the family property in the village of Vilacamba where she lived with her father John, husband Michael and the couple’s three teenage daughters on 20 May, according to reports. Michael Williams told KDVR that the first he realised the farm was under attack was when he was struck by a hard object in the head while standing outside and collapsed to the ground. Francesca had been hanging washing when the gunmen showed up, and was fatally shot in the back while trying to protect her birth father John, her adoptive mother Marianna Bacilla told NBC San Diego. John, who suffered from emphysema and dementia, was stabbed three times during there attack but is out of hospital and expected to make a full recovery. The couple’s daughter Rachel told KDVR that she had witnessed the gunfire strike her mother. “I saw my grandpa on the floor with a strange man to the right, then I saw another man with my mom and she was scrambling after him, basically fighting him off,” the teenager said. “Then I saw two sparks of a gun and heard gunshots.” The family reported hearing the men asking in Spanish for the “large aunt”, and believe they were at the wrong address. Michael Williams told the news site he was tied up before the assailants ransacked the home taking any valuables they could find, including iPads and laptops. After they left he discovered his wife badly wounded and drove to the nearest medical facility, but she had already succumbed to her injuries. Her body has since been returned to her former hometown of Kremmling, Colorado, and a funeral is due to be held on 3 June. On a fundraising page set up to help the family, Ms Bacilla said they had moved several years ago to the farm in rural southern Ecuador where they were raising chickens, goats, horses, pigs, ducks and guinea fowl. “It was their humble Shangri-La,” she said. Francesca Williams was described as a devoted wife and mother, who graduated from the University of California, San Diego with a degree in linguistics. She was fluent in French, Spanish and Lithuanian, worked as a translator and had recently published her first illustrated children’s book The King’s Magic. A few days after the attack, Michael Williams said the family were in a “heightened level of anxiousness and security because we aren’t in a safe place”.
